Vegan Orange Cauliflower
Vegan Orange Cauliflower

Ingredients
1 orange
1 tbsp of agave nectar
1/4 cup of reduced sodium soy sauce
1 tbsp of cornstarch
1 head of cauliflower
Directions
1. Preheat oven to 400F
2. Combine juice of 1 orange, agave nectar, soy sauce and cornstarch in a small sauce pan. Bring to a boil and reduce heat to medium high heat. Let glaze reduce for about 15 minutes. Stir frequently. Remove from heat and let cool.
3. Trim 1 head of cauliflower into bite sized florets and add to a large bowl. Add in orange glaze.
4. Using a spoon, mix well. Cauliflower should be evenly coated. Note: Even after cooling for a bit, the glaze can still be pretty hot so you really want to use a spoon for this.
5. Line a baking sheet with parchment paper and spread cauliflower out evenly. Drizzle with a small amount of oil.
6. Bake for 40 minutes, flipping after 20 minutes.
7. Remove from oven, let cool and serve.
