Vegan Pad Thai
Total Time: 35 Minutes | Prep Time: 10 Minutes | Cook Time: 25 Minutes | Servings: 4
Ingredients
8 oz of brown rice noodles
2 cloves of garlic
2 shallots
1/2 cup of green peas
1 cup of bean sprouts
1/4 block of tofu
Sunflower oil
Sauce
1 lime
1/4 cup of reduced sodium soy sauce
sriracha to taste
Garnish
Peanuts
Directions
1. Bring a large pot of water to a boil and add in brown rice noodles. Reduce to medium high heat and cook for approximately 10 minutes, or until noodles are done to your liking.
2. Mince garlic and dice shallots. Crumble tofu to create a scrambled egg texture.
3. Heat a large frying pan to medium heat and add in garlic, shallots, peas, bean sprouts and tofu. Drizzle with sunflower oil. Saute for 15 minutes or until tofu begins to brown.
4. To make sauce, add the juice of 1 lime, soy sauce and sriracha to taste to a small bowl and mix well.
5. Add cooked brown rice noodles and sauce to frying pan and mix well. Saute for an additional 5 minutes on medium heat.
6. Remove from heat and let cool.
7. Garnish with peanuts, serve and enjoy!
