Vegan Parsley Chickpea Tenders

Ingredients
1 and 1/2 cups of cooked chickpeas
1/2 cup of parsley
1 tbsp of reduced sodium soy sauce
1/4 cup of vital wheat gluten
1 tbsp of cornstarch
1 cup of nutritional yeast
Directions
1. Combine all ingredients inside a blender and puree. Let sit for 10 minutes.
2. Heat a large frying pan to medium heat and drizzle with oil.
3. Form 4 tenders out of chickpea mixture and add to pan. Cook for 5 minutes, flipping after 2 -3 minutes, or cook until both sides are golden brown.
4. Serve immediately or portion into tupperware.
