Vegan Pina Colada Pancakes

Ingredients
1 and 1/2 cups of all purpose flour
1 cup of pineapple juice
1 cup of pineapple chunks
1 tbsp of coconut oil
1 tsp of baking soda
Optional: shredded coconut
Directions
1. Place pineapple juice, pineapple chunks, and coconut oil into a blender and puree until smooth.
2. Add all purpose flour and baking soda to a mixing bowl. Pour in pineapple mixture and stir until batter is smooth.
3. Heat a small frying pan to medium heat and pour in batter. Cook for approximately 3 minutes per side or until each side is browned and pancake fully cooked through. Repeat until all batter has been used.
4. Garnish pancakes with shredded coconut and serve immediately. Alternatively, you can portion pancakes into tupperware for meal prep.
