Vegan Pinto Bean Burgers

Ingredients
15 oz of pinto beans
1 cup of vegan pepper jack cheese
1 tbsp of cornstarch
1 tsp of vital wheat gluten
1 tbsp of reduced sodium soy sauce
Optional:
1 tsp of tomato paste
4 whole wheat hamburger buns
4 small leaves of lettuce
2 on the vine tomatoes
Chipotle adobo sauce to taste
Directions
1. Combine pinto beans, vegan pepper jack cheese, cornstarch, vital wheat gluten, soy sauce, and tomato paste in a blender and puree until smooth.
2. Heat a medium sized frying pan to medium heat. Form 4 patties and add to pan.
3. Cook for approximately 4 minutes per side, or until each side has browned.
4. Optional: Add each patty to a whole wheat bun with a small leaf of lettuce, 2 slices of on the vine tomato and top with chipotle adobo sauce to taste.
5. Serve and enjoy!
