Vegan Pumpkin Mousse

Ingredients
1 cup of cashews
1/2 cup of pumpkin puree
2 tbsps of maple syrup
Directions
1. Add 1 cup of cashews to a sauce pan and cover with water. Boil for 10 minutes. Strain and let cool.
2. Once cashews have cooled, add to a blender with pumpkin puree and maple syrup. Blend until smooth.
3. Serve and enjoy!
