Vegan Pumpkin Pie With A Pecan Crust

Ingredients
2 cups of pecan pieces
3 tbsps of maple syrup
30 oz of pumpkin puree
1/2 cup of munk fruit sweetener
1 tsp of cloves
1 tsp of nutmeg
1 tbsp of cinnamon
Directions
1. Preheat oven to 350 F and grease a glass pie dish.
2. In a blender, combine 2 cups of pecan pieces and 2 tbsps of maple syrup. Plus and let rest for 5 minutes.
3. Combine pumpkin puree, 1 tbsp of maple syrup, munk fruit sweetener, cloves, nutmeg and cinnamon into a bowl and mix well.
4. Pour pecan pieces into the center the pie dish. Spread evenly across the bottom on the dish. Note: For this recipe, I only used pecan pieces for the very bottom. If you’d like to add pecans to the sides of the pie dish, use 3-4 cups of pecan pieces and 4 tbsps of maple syrup.
5. Pour pumpkin mixture on top of pecan pieces and spread evenly.
6. Bake for 40 minutes. Remove from oven and let cool.
7. Serve and enjoy!
