Vegan Pumpkin Soup

Ingredients
1 medium pumpkin
Sunflower oil
1/2 tsp of nutmeg
1/4 tsp of cloves
1/2 tsp of coriander
1/2 tsp of turmeric
1 cup of hemp milk
2 tbsps of maple syrup
Slivered almonds for garnish
Directions
1. Preheat oven to 400F.
2. Skin and deseed pumpkin. Slice into small wedges. Add to a baking sheet and drizzle with sunflower oil. Sprinkle with nutmeg, cloves, coriander and turmeric. Mix well.
3. Bake for 1 hour, or until pumpkin is fully cooked through. Remove from oven and let cool.
4. Once cooled, add pumpkin to a blender. Add in hemp milk and maple syrup. Blend until smooth.
5. Add pumpkin soup to a bowl and garnish with slivered almonds. Sever and enjoy!
