Vegan Raspberry Breakfast Parfait

Ingredients
1/2 cup of cashews
1/4 cup of unsweetened vanilla almond milk
1/2 cup of vegan granola
1/2 cup of raspberries
Optional: 1 tbsp of extra vegan granola
Directions
1. Add cashews to a small pot and cover with water. Boil for 10 minutes, strain and let cool.
2. Once cooled, add cashews and almond milk to a blender. Pulse for 20 seconds or until cashews have become completely smooth.
3. Layer a small glass with 1/4 cup of vegan granola, then 2 tbsps of cashew mixture, then 1/4 cup of raspberries. Repeat.
4. Garnish with extra vegan granola, serve and enjoy!
