Vegan Salted Chocolate Oat Cookies

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 10

Ingredients
1 and 1/2 cups of oat flour
1/2 cup of rolled oats
1/2 cup of coconut sugar
1/4 tsp of baking soda
1/4 cup of melted vegan butter
1/2 tsp of vanilla extract
3/4 cup of almond milk
1/2 cup of vegan chocolate chips
1/2 tsp of sea salt

Directions
1. Preheat oven to 350F and line a baking sheet with parchment paper.

2. In a large bowl, add oat flour, rolled oats, coconut sugar and baking soda.  Mix well.

3. Add in vegan butter, vanilla extract and almond milk to the flour and mix well.  Fold in vegan chocolate chips.

4. Portion 2 tbsp of cookie dough onto baking sheet to form one cookie.  Repeat until all dough is used.  Dough should yield approximately 10 cookies. 

5. Sprinkle each cookie with a pinch of sea salt.

6. Bake for 20 minutes or until cookies have browned.  Remove from oven and let cool.

7. Serve and enjoy!
