Vegan Scampi

Total Time: 35 Minutes | Prep Time: 10 Minutes | Cook Time: 25 Minutes | Servings: 5

Ingredients
8 oz of chickpea pasta
8 oz of temeph with flax seed
3 lemons
1 tsp of black pepper

Directions
1. Bring a pot of water to a boil and add 8 oz of chickpea pasta. Reduce to medium high heat and cook for approximately 15 minutes or until done to your liking.

2. Crumble tempeh into a bowl and pour in juice of 1 lemon. Sprinkle with 1 tsp of black pepper.

3. Add tempeh to a small frying pan and saute for 15 minutes, or until tempeh has evenly browned.

4. Combine pasta and tempeh mixture. Add juice of 2 lemon and stir well.

5. Serve and enjoy! Or portion into a tupperware for meal prep.
