Vegan Smashed Potatoes

Ingredients
10 oz of small red potatoes
Sunflower oil
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of paprika
1 cup of vegan cheese
1/4 cup of almond milk
Directions
1. Preheat oven 400F.
2. Add red small red potatoes to a large pot. Cover with water and bring to a boil. Boil for approximately 20 minutes, or until potatoes have fully softened. Drain and let potatoes cool.
3. Once potatoes have cooled, add to potatoes to a baking sheet. Using a potato masher, smash each potato. Drizzle with sunflower oil and sprinkle with onion powder, garlic powder, and paprika.
4. Bake for 20 minutes or until potatoes have browned.
5. While potatoes are baking, add vegan cheese and almond milk to a small pot. Melt cheese on low for approximately 10 minutes. Set aside.
6. Remove potatoes from oven and drizzle with melted cheese. Let cool and serve and enjoy!
