Vegan Stir Fry With Tofu

Total Time: 45 Minutes | Prep Time: 20 Minutes | Cook Time: 25 Minutes | Servings: 5

Ingredients
15 oz of pressed tofu
3/4 cup of teriyaki sauce
1 tbsp of cornstarch
8 oz of brown rice noodles
2 cloves of garlic
3 shallots
1 cup of snap peas
8 oz of water chestnuts
2 leaves of bok choy
1 tsp of red chili flakes
1/2 tsp of fresh grated ginger

Directions
1. To press tofu, wrap in a paper towel and place between two plates. Let sit for 10 minutes.

2. Crumble tofu into a large bowl and add in 1/2 cup of teriyaki sauce and cornstarch. Mix well and let sit for 10 minutes.

3. Bring a large pot of water to a boil and add in brown rice noodles. Reduce to medium high heat and cook for approximately 10 minutes -or until noodles are done to your liking. Strain and set aside.

4. Add tofu to a small frying pan and saute for 10 minutes on medium heat or until tofu has started to brown.

5. Dice shallots and mince garlic. Add to a large frying pan along with snap peas and water chestnuts. Saute on medium heat for 10 minutes, or until veggies have begun to soften.

6. Slice 2 leaves of bok choy (stalks optional) and add to frying pan with veggies. Saute for an additional 2 minutes.

7. Add in tofu and mix well.

8. Add in brown rice noodles, 1/4 cup of teriyaki sauce, red chili flakes and fresh ginger. Mix well and saute for 5 minutes.

9. Serve and enjoy!
