Vegan Stuffed Acorn Squash

Ingredients
2 acorn squashes
Sunflower oil
1 tbsp of black pepper
1 tbsp of ground sage
1 cup of dried cranberries
1 cup of pecans
Fresh thyme for garnish
Directions
1. Preheat oven to 400F.
2. Slice 2 acorn squashes in half, removing seeds.
3. Place acorn squash halves in a baking dish and drizzle with sunflower oil. Sprinkle with black pepper and ground sage.
4. Bake for 1 hour or until squash becomes completely tender.
5. Remove from oven and stuff each half with 1/4 cup of cranberries and 1/4 cup of pecans. Garnish with fresh thyme.
6. Serve and enjoy.
