Vegan Teriyaki Tempeh

Vegan Teriyaki Tempeh

Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings:5

Ingredients
Teriyaki Tempeh:
1/4 cup of teriyaki sauce
1 tsp of cornstarch
8 oz of tempeh
Rice:
1/2 cup of wild rice
1/2 cup of fresh pineapple
1/4 cup of frozen peas
3 cloves of garlic
Scallions for garnish

Directions
1. Add rice to a small pot and cover with water. Bring to a boil and reduce to medium high heat. Let cook for approximately 20 minutes or until all excess water has evaporated.

2. Add fresh pineapple, frozen peas and minced garlic to a small frying pan. Saute on medium heat for 5 minutes. Set aside.

3. Add teriyaki sauce and cornstarch to a bowl and mix well.

4. Crumble in tempeh and mix well so that tempeh is well coated.

5. Heat a medium sized frying pan to medium heat and saute tempeh for approximately 10 minutes or until it has turned golden brown.

6. Combine wild rice with sauteed pineapple, peas and garlic. Top with tempeh and garnish with scallions.

7. Serve and enjoy!
