Vegan Thai Red Curry
Vegan Thai Red Curry
Total Time: 30 Minutes | Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4
Ingredients
1/2 cup of wild rice
2 cloves of garlic
2 shallots
3 petite peppers
1 large carrot
1 cup of coconut milk
1 lime
1 tsp of chili powder
1/2 tsp of ginger
1 tsp of red curry paste
Directions
1. In a medium pan, add wild rice and cover with water. Bring to a boil and reduce to medium high heat. Cook for approximately 20 minutes, or until all excess water has evaporated.
2. Dice shallots, peppers and carrots and mince garlic. Add to a large frying pan and saute on medium heat for 10 minutes.
3. Add in coconut milk, juice of 1 lime, chili powder, ginger, and red curry paste. Mix well.
4. Add in cooked rice and mix well and let cool.
5. Serve and enjoy!
