Vegan Tomato Basil Tofu

Ingredients
8 oz of firm tofu
12 campari tomatoes
1 cup of fresh basil
Directions
1. Press tofu and let sit for 10 minutes. To press tofu, wrap in a paper towel and place between 2 plates.
2. While tofu is resting, add 8 campari tomatoes and 1 cup of fresh basil to a blender. Puree until smooth.
3. Heat a large frying pan to medium heat and drizzle with oil. Slice tofu into thin strips and add to pan. Pour tomato basil mixture over tofu.
4. Cook tofu for approximately 20 minutes, flipping slices about every 5-10 minutes. When finished, the majority of the liquid should be evaporated.
5. Let cool and serve immediately or portion into tupperware. Top each serving with slices of fresh tomato.
