Vegan White Bean Burgers

Vegan White Bean Burgers

Total Time: 20 Minutes | Prep Time: 10 Minutes | Cook Time: 10 Minutes | Servings: 4

Ingredients
29 oz of cannellini beans
1 tbsp of vital wheat gluten
1 tbsp of cornstarch
1/3 cup of nutritional yeast
2 tbsps of reduced sodium soy sauce
1/2 tsp of fresh grated ginger
8 oz of baby bella mushrooms
4 whole wheat hamburger buns
Sauce
1 tbsp of vegan mayo
1 tbsp of sliced scallions
Sriracha to taste

Directions
1. Add cannellini beans, vital wheat gluten, cornstartch, nutritional yeast, reduced sodium soy sauce, and fresh grated ginger to a blender and puree until smooth.

2. Add 8oz of sliced baby bella mushrooms to a small frying pan and saute on medium heat for 10 minutes, or until mushrooms have fully reduced.

3. Form 4 patties and add to a medium sized frying pan. Cook on medium heat for 4 minutes per side, or until each side has browned.

4. While mushrooms and patties are cooking, add vegan mayo, sliced scallions and sriracha to taste to a small bowl and mix well. Set aside.

5. Once finished, add white bean burger to a toasted whole wheat hamburger bun and top with 2 tbsps of cooked mushrooms. Add vegan mayo to the bun.

6. Serve and enjoy!
